Peanut Butter Mini Cups
It’s all in the crunch! Snack time has a new boss and its name is Black Cat Crunchy Peanut Butter.
Ingredients
- 250ml (1 cup) Icing sugar
- 250ml (1 cup) Black Cat Crunchy Peanut Butter
- 125ml (½ cup) light brown sugar
- 65ml (¼ cup) sultanas or currents
- 30ml (2 tablespoons) unsalted butter, softened to room temperature
- 30ml (2 tablespoons) unsalted butter, softened to room temperature
- 5ml (1 teaspoon) vanilla extract
- 500ml (2 cups) Beacon Dark Chocolate or chocolate chips
Method
- In a small bowl, combine icing sugar, peanut butter, brown sugar, sultanas, butter and vanilla. Cover and set aside.
- Melt chocolate chips and add butter over a double boiler on medium heat. Gently stir with a whisk until well combined. (You can also melt in a microwave).
- Line a muffin tin with tiny muffin cups. Drop a rounded teaspoon of peanut butter mixture into each cup, top each with 2 teaspoons of the melted chocolate mixture. Refrigerate overnight until set. Serve sprinkled with cocoa powder.
